I definitely think that copper-zinc imbalance can contribute to adrenal fatigue. Like you my problems started when I began a strict vegetarian diet consisting of gluten-free grains, vegetables, beans and fruits - a nutritionist’s dream right? Well, apparently not. My health has been rubbish ever since. So anyway, I’m now experimenting with more fat and protein in my diet (ie. meat, fish, eggs and dairy, which I ate very sparingly or not at all before) which incidentally are higher in zinc, which theoretically should help redress the copper-zinc balance - and so far, so good.
