I have no idea of my cholesterol levels but I do eat a lot of fats. I will cook with butter and sometimes ghee, coconut oil I havent used for a while Id say probably 3-4 months but I do drink heavy cream (watered down a bit) as milk gives me issues but heavy cream does not. I dont avoid fatty meats either, I will eat legs and thighs of chicken, steak etc.
For carb sources I try to keep it low GI. Squash, Sweet Potatoes, Yams, Brown Rice etc. Every now and then I will eat some pizza or some plain white bread with a sandwich but nothing excessive.
