Hashimoto's is an enlarged thryoid that is trying to compensate for failure to make thyroid hormones from iodine. The patient is hypothyroid, and although the gland is unable to make hormones, it continues to take up iodine. In about 95% of the cases antibodies are present.
My read is that Hashimotos results from deficient nutrient absorption in the ileocecal valve region,duodenum, jejunum, and ileum (these share similar tissue architecture and are responsible for most of the body's nutrient absorption), and that the problem is due to gluten sensitivity. The decreased nutrient absorption is what is responsible for the failure of the thyroid to make its hormones.
Before doing the Hashimoto test, if it were me, I would first have a tTG test (tissue transglutaminase enzyme test) done to determine gluten sensitivity. If the results are unfavorable, I'd cut out all grain and all dairy products for twelve weeks, and then have the Hashimoto test done. The connection between Hashimoto's and gluten intolerance isn't well-publicized, but exists nevertheless.
