Blackberries in themselves are pretty darn healthy! Depending on How Healthy you want to go... why not follow a good cobbler recipe, sweetening the berries with (a) maple syrup; (b) stevia; or (c) apple juice concentrate. Substitute whole grain flour for white, clean up the type of fat used and voila:

3 cups berries
sweeten to taste
1 T. whole grain flour

Remember if you used maple or apple, there will be extra moisture with the berries, so double up on the thickening.

Just before topping, bring berrie mixture up to a boil, but do not let it boil. Remove it from the heat and top:

Blend 1-3/4 cups whole grain flour
1/2 t. Sea Salt
3 tsp. Rumsford baking powder (the one with no aluminum)

Rub in 1/4-1/3 c. good oil like canola or cold pressed walnut

Add 3/4 c. soy milk, stir just til mixed (don't overwork)

Spoon dough over berries in an 8x8 baking dish, sprinkle with cinnamon and bake about half an hour at 425.

Slow forum -- but better late than never!

Enjoy!
Somer
