Does anyone have any experience with the raw cheeses of Rumiano They seem quite affordable my local health food stores do not seem to carry low sodium cheese.  All their raw stuff is very highly salted which tells me like most commercial cheeses they must disguise an inferior tasting product.  Oh I forgot to check Whole Foods, do they carry low sodium cheese?

I am specifically interested in the low sodium versions or any other recommendations on raw and or organic cheeses (low in sodium is a pre-requisite)
