To add to your list: I use animal manures, compost tea, straw, kitchen refuse, grass clippings, garden refuse, comfrey, (and other ground covers...collard greens)
wood ash.
Oak leaves and pine needles will make your soil more acidic.
You can use pickling lime, I wouldn't. I use dolomite lime or garden lime made from limestone.
