Hi,
I live in western Canada and I get my buckwheat noodles from T&T supermarket, although, I did see them at Choice's market and some other health food stores here. I think that in USA you should check out asian food stores and ask for SOBA noodles and always read labels. ( I think they are originaly from Japan) Good luck.
