on the opposite end of the spectrum, coconut oil is highly stable, in fact probably the most stable veg. oil

plus, it's short chain fatty acids are readily munched inside the cells , without the need for bile.

Get Mary Enig's (PhD.) book "Know Your Fats", and memorize it ! She's one of the good-guy girls.
