Cholesterol: Do not eat out. Do not eat transfat. I eat a diet that you would consider high in fat. (organic meats, eggs, fermented whole milk, fermented vegetables coconut oil...) I recently had my cholesterol tested: Total 274
HDL 103 LDL 158 however my ratio, which is what I always go by, is 2.7. The range is 0.0-4.4. My ratio is very low. My HDL is so high that it negates everything else. The Life Extension doctor told me my cholesterol was GREAT!!!
It has been like this for many years. It is suggested that women have a ratio of 3.3.

As far as cook books, have you checked out Nourishing Traditions or The Maker's Diet. Have you studied Mercola's website?

I am not a diabetic, but I have many friends who are.
