I wouldn;t mess around with starter I'd get the real thing. Milk kefir starter or real won't ferment coconut water right away, it should be introduced but what ever you got there you can drink. If you left coconut water out for 24 hours with or without the kefir it would not kill you if you drank it. Use water kefir with young coconut water.
