This isn't meant to be an answer, just an observation, referring to your quote:

This increases insulin's potency, allowing the blood sugar to go too high."

From the reading and studying I have done, the blood's pH must be maintained in very narrow parameters or we would DIE. My inner spirit just yells that the above quote ABOUT THE BLOOD's pH can't be correct or there is more to it than is explained.
