i had a good immediate reaction to my very first batch of homemade kraut last year, almost as soon as i ate it i could feel it working in the back of my throat, it was a very odd but nice feeling, i ate 2 medium sized pieces before each meal for 5 days, and after the 5 days i felt so much better, my mouth which is usual thick with siliva to the point i slur my words, was thin and watery, and i remember taking the dog out for a walk across the fields and suddenly getting the urge to run, and as i was running i felt like i had my legs back, because usually they feel weak and feint (if u know what i mean) but as i was running, i was kind of stamping on the ground getting faster and faster. the problem is i have been experiementing with the kraut ever since, doing it the proper way, but not like the very first batch, and i havent been getting the same results. i think the first batch was optomised for friendly bacteria, whereas the subsequent batches have followed the full fermentation procedure, which hasnt worked very well, although i cant be sure untill i try another batch, possibly in a months time.
