If that all sounds a bit complicated, I buy a vegan cheese in the Uk (not sure where you're based?) which is a soya & potato starch blend...approved by the vegetarian society. It's a company called The Redwood Co that make it and I've only tried the white cheddar style cheese, though where I buy it they also sell a nacho cheese style and garlic & herb.
