I was just looking up some stuff last week on winter roots cause feeling a craving for that, altho I never have really eaten much in the way of roots before (besides the typical potatoes, carrots, roots include parsnips, rutabaga, turnips, beets, etc.). Well what I found immediately was some info on beets and the info directly confirms Telman's and your intuition/suggestions.
"In the first study mentioned above, not only did protective antioxidant activity increase in the livers of beet fiber-fed animals, but also their total cholesterol dropped 30%, their triglycerides dropped 40% (elevated triglycerides, the form in which fats are transported in the blood, are a significant risk factor for cardiovascular disease), and their HDL (beneficial cholesterol) level increased significantly."

Also helps heart function via cholesterol, as you may or may not know is directly related to liver function. And cited to help with colon function. Its quite a veggie!
