What you describe is very close to what you should be getting. :) I've been making beet kvass for about a year now and I really enjoy it. The white stuff can be spooned off and it will not affect the flavor or the wholesomeness of the kvass as long as you don't allow it to build up too much. I've read elswhere that if something that you ferment goes "off" you will know right away, because it will smell so vile that you *couldn't* eat or drink it.
