Wow thank you, I do appreciate the time you put into responding. You definitely helped shed some light on some things I was not aware of, for instance the Nitrogen (NPN) issue. It makes sense because I have lots of Spinach and other greens that are not of the highest quality and don't read particularly high with the brix meter. It's tough, because I cannot grow my own produce at this point, and in my area it's very hard to find quality fresh produce. I know the organics generally test higher, but some of it is so expensive and simply cost-prohibitive (The only organics I buy are apples, bananas and carrots). I will try to keep searching for better sources though now that I know it can actually be harmful to eat poor quality produce (and would be better to not eat them then to eat them at all!).

The calcium deficiency I'm not too surprised either, I sometimes supplement with calcium, but I do not believe I have a high quality calcium that's easily absorbed. I think I'll try to start implementing more high-calcium vegetables into my diet such as collard greens, kale and broccoli (hopefully of high quality!). I may start taking blackstrap molasses as well which I hear is excellent (and additionally high in calcium!).

May I ask what you feel a raw food diet is lacking in? I always felt intuitively that live foods are more nourishing to the body and they generally really make me feel so much better. I definitely feel a lot better now on the raw diet than when I was vegetarian or even vegan, and I feel like when I'm not eating raw I take on a lot of bad habits. I'm the type of person where it's mostly either all or nothing... meaning if I don't do something 100% than everything seems to fall away. This has helped me in some ways, but obviously not a particularly healthy trait in-of-itself :D! Right now I'm about 90% raw, and while I do feel much better, I know there are certainly still problems to address!
