I just stumbled across this. It seems to be an online book, of sorts, and it provides quite a bit of information on fermentation - different types, why it is beneficial.

It includes telling of many different vegetables and fruits and how they are fermented around the world, and telling us how to do it - recipes!

Worth looking at!
