is not what is meant by "Soil Based Organisms" - though they do exist there.
In general the SBOs are some combination of the above and other classes of microbes.

The "EM of the Japanese Guy" is not the above cultures though it specifically is a mix of aerobic, anaerobic, and other classes...
For the most part in the modern world your mention of Ham and Chorizo is slightly amiss...there is cultured meat products - but it is easier to find a real Salami {which does use soured milk} than it is to find unprocessed Ham {which doesn't, and I wouldn't count smoking a 'culture') or Chorizo. And in the US its darn near to impossible to sell it without killing the culture with added preservatives ...
