I am currently reading "The China Study" by Dr. T. Colin Campbell and his son Dr. Thomas M. Campbell.

Just 40 pages into the book, Dr. Campbell states that our greater than needed consumption of protein is indicated in the rise in cancer rates. hmmm... I am sure there is more to come as I read through the book as to the whys, etc. as he and his son see them.

In addition, I read an article at newstarget yesterday:

http://www.newstarget.com/z021053.html

(note I believe there are editing errors in the article, unless they have since corrected them; you will know where they are)

At any rate the article is titled: "Mineral depletion of soils results in higher acrylamide content of foods"

The specific missing mineral seems to be sulfur. The acrylamide(s) is a by product of processing at high heat, foods that seem to be higher than normal in proteins due to the mineral depletion. These made news with things like french fries, chips etc. a few years back.

Just would like thoughts and discussion (not debate) on this as we have discussed the consumption of protein and mineral depleted soils before as separate issues, but this is the first I have found tying the two (my tie in, not theirs) in together.

Thank you,

grz
