Many thanks for the really helpful replies. I read through all the suggested links. Needless to say, there is lots to learn here! Very, very interesting stuff; much of it new to me.
I'm intrigued by the coconut recommendation; I plan to give it try this weekend. I suspect my diet has missed out on some important things for a long time.
To answer your questions. My motivation in phasing meat out of my diet is 80% health and 20% ethics. I heard a spokesperson/leader of the vegetarian association (or something like that) on NPR; his interview really made sense to me. He discussed the many reasons/benefits of being a vegetarian including economics, ethics, health. He made a case that humans were not designed to be meat eaters. I'm sure you've all heard this stuff, but it was new to me.
At any rate, I don't think I'll ever become a complete vegetarian, but I'm certainly being much more selective. And, it sounds like it time to get my juicer out.
