dried herbs would not work very well. kiefir is already fermented with other strains of bacteria that may or may not get along with those in EM, so that wouln't be a good idea.
if you are interested i would get a yogurt maker ( you can get a cheap one off ebay) then in the container put some milk, some organic unsulfured black strap molasses, and some EM. then experiment with exact amounts and with how long you ferment it for. the EM will activate and begin feeding on the nutrients in teh molasses and also eat the lactic acid in the milk. you could also add some FOS is you want. this will be a fermented product absolutely teaming with active live bacteria.
if you want to ferment veggies or herbs, use fresh ones. put some in a mason jar, add some EM, and see what happens. you may or may not want to add some molasses. good luck, let us know if you try any of that.
