OK Larry - I'm tempted to make you a pot of the most delicious lentil soup you have EVER HAD - and, I am not exaggerating one bit - I happen to be Greek so I could make you the most delicious, fresh, home cooked meals every day. I love to cook but not necessarily a big eater.

So, lentils it is - tomorrow, once again - diced carrots, diced celery, diced onions, plenty of garlic all sauteed in extra virgin olive oil until soft with the addition of a couple of tablespoons full of tomato paste and plenty of spices. And, when the lentil soup is done I usually throw in about a cup or less, of very small pasta, stir it and cover it and let it sit for about half an hour. By then, it is fully cooked and ready to eat.

And, you never need animal broth in every freaking dish, like they do here, in order to be delicious. My god, if you know how to cook you have plenty of great taste without adding broth from animal carcasses.

I love to cook - but unfortunately, when you have to cook for yourself, you kinda get tired of the daily pots and pans and let's face it - it's so nice to share especially when you have loved ones to share with. Unfortunately, I have no more family - my sweet Brother died unexpected a few years ago and since then I have been taken to the depths of despair. We were very close - he was not only a wonderful, loving Brother but was also like a father and for sure, my very best friend in the world.

You know, we never appreciate fully what we have (we humans) until we no longer have it - that's OK - I'll wait till it's my time to leave this miserable earth and be with my family once again.

Also thanks for reminding me about the peanut butter - good protein -
