I also just started but a while longer than you, so would like to share the experience. I go to work everyday and have a compact schedule, so now to best fit the diet into my schedule, I bought 4 big plastic storage boxes, and process the veggies into small cubes or slices all at once, it would take a whole hour or more, but will last for 3+ days. I have a large size steaming pot, put a plate, then toss the veggies layer by layer. I am only using brocolli, cauliflower, cucumber, squash, carrot, celery, asparagus. My experience is that brocolli is most effective to help formed stool, cucumber is best to help stopping bleeding, Celery has to be well-cooked, otherwise its fiber is too strong, might irratate colon. But Celery and asparagus have their special flavor while steamed with other, so help the taste. I also use a special chinese Yam, (http://images.google.com/images?svnum=10&hl=en&lr=&q=shanyao), which is very slipery, I feels that it helps a lot. It is recommended by chinese traditional medicine. I peel it and cut it into slices and steam with salmon or veggies. All the veggies should be peeled if possible.
I cut off any starch food, my company offer free breakfast (all kinds of breads, oatmeals, cereals, milk, soymilk) and all kinds of fruit, too bad I can't eat any of them. Starch and fruit are the top of cut-off list. I only eat brown rice and pearl barley.
Now, I am much used to the lifestyle that I've to adapt to. I also practice Taichi, and meditation. I am willing to try anything to get into a total remission. So let's share the experience and encouragement. Good luck!
