This is just speculation, but I wonder if it is because it is a live cultured food, and perhaps the particular microrganisms that inhabit your digestive system don't get along well with the ones in the vinegar? It could be that there is some kind
of die off reaction.
Also, I don't know if your into the blood type books, but I remember that type O blood people don't do well with vinegar.
