First week off, I'd think you'd be best focusing on vegetable only meals like salads, sauted vegetables, stir fry, ect. Actually, thats more like the first two days. Then you could add in low GI fruit like lemons, grapefruit, green apples, and lean protein. Then the next week low GI breads like oatmeal ect, and then build up to more the week after carb shockers like bananas, muffins, breads, ect. Overall, you only have to be careful with your overall calorie count, which should be comfortable for you. First day off, maybe 400 calories, one meal. Eat this many calories for two days, then add another 200 calories for two days.

Oh and after water fasting, its really important to liver/gall bladder flush. Not eating means all the bile in your gall bladder get stagnant and will harden into stones. Not to mention, you've propably overtaxed it a bit with the Atkins diet, so doing one even before your fast, and then afterwards would really help, even if you didn't get any ostentatious stones. :D
