Yep, this can be challenging at first. My oldest daughter isn't quite 100% yet but she takes things like sliced cucumbers with lime juice and salt and fresh salad with her lunch. Or sliced carrots. She likes to take fresh fruit too altho she doesn't adhere to the food combining. I don't like to pressure my kids a lot about food so I let her change at her own pace and just try to provide example and discussion when things come up.

For 'main course' how bout a thermos of veg soup? A veggie pita sandwich? A room-temp rice pilaf with veggies (you can make the rice the night before and it will warm up by lunch)?

Just do a search for 'vegetarian kid recipes'. Or check out your libray. I'm having to brainstorm ways for my kids, and myself, as well to transition to vegetarian. I find it's a whole way of eating that I have to change my mind and habits about.

If they can have a wholesome breakfast at home too they'll have two healthy meals covered!
