hi,
i became a vegan after listening to dr. lorraine day's cd's called conquering confusion. she discusses the toxins and health risks of the meat and dairy industry.
i've been a vegan for 4 months. it is a natural high! i used to be tired and depressed and uninspired.
i have been doing several things to keep a supply of food around...i had very little extra time for chopping vegetables, so i had to cook ahead and plan ahead. (haven't gotten to the "raw" vegan diet...maybe i'll work up to that).
each week i soak two bags of beans in water over night, poor the water off, and put new (non flouride) water in them and cook them in the crock pot. (this gets rid of most of the problems associated with beans and digestion). black beans, pinto and great northern beans are great.
i fix a large glass pan of brown rice. (i ordered them from ebay...cooking in metal was giving me headaches...(i have rice for breakfast with rice milk and honey). or i have it with some organic spaghetti sauce and organic frozen vegetables, (cooked) for lunch.
i fry potatoes in olive oil or boil them. (with Sea Salt from the asian market...the kind that is finely ground.
whatever is organic and fresh, i buy. i also buy frozen organic fruit and vegetables. they are quick. the fruit is great in smoothies.
organic salsa and chips are a treat.
the taste of real food is so good.
my grocery store has expanded its organic dried section. a favorite of mine is a mix of cranberry raisins, pecans and coconut flakes.
i buy pasta at the asian market. (read the label if it's in english also). (to make sure no eggs are added). their pasta is light and tastes good without all of the preservatives . any kind of stir fried vegetable or sauce can be added to pasta. i have some live herbs in pots. they are great in olive oil on pasta fried in garlic. (optional).
i finished a class that was taking all of my time. now i can read some vegan cook books. i did find out that vegetables have protein in them. everybody asks me about protein and how do i know if i'm getting enough...(i wasn't eating all that healthy before i became a vegan and nobody was worried about it! well my hair isn't falling out! (that's what you always hear about vegetarians). no, my hair is thick and shiney and i have more muscles and stamina than i had before. (i lost a lot of flab).
the main thing i wanted to do is give you some ideas for cooking a few foods ahead of time so you wouldn't starve while you were figuring out what to eat.
i also buy chiabatta bread at the grocery store. it has no dairy in it. (however, according to Hulda Clark , i shouldn't be eating any bread from a grocery store because of mold...the sack has little holes in it to allow air circulation...maybe that helps...i slice it and fry it in olive oil with herbs. (instead of butter). you can make a sandwich of green and red peppers and squash that has been fried in olive oil with italian herbs. (if you like those vegetables). i plan to try making bread myself soon. (i got some recipes from vegan websites.
when you go to the grocery store, check out the foreign food sections. they often are preservative free. just stay away from soy if it has been genetically engineered. i have just quit buying it at all.
i fixed steak for my meat eating family. they loved it. it smelled ok. the roast beef last week smelled ok. but chicken and hotdogs smell really dreadful. once you get off of the chemicals, you become more aware of everything.
i am increasing the vegetables and decreasing the other stuff as i go along.
