The protein thing does not have to be confusing. It is simple that the body simply becomes more efficient at extracting and utilizing proteins even those in small amounts. "High protein" is just not a concern.
Wheat and specifically gluten can be irritants to the system gluten is specifically the protein part of the matrix and is difficult to digest. Do a search on gluten sensitivity and you shall begin to see The other side.
