Thanks for your input. I outlined all the health reasons, as well as my belief system (eating organic, hormone free and free range eggs- animals have not suffered). I also presented nutritional information, and offered to help guide the cafeteria to better serve vegetarians and vegans. And now I'm exempt!!! I feel so much better now, and I've been making my own food and not worrying about spending money for a meal plan that I don't use. Its wonderful!
