Ever noticed the glycemic index rating of tofu frozen dessert? It not only blows away regular ice cream in its ability to jack up your blood sugar, it is higher even than the pure sugars.
(Want liver stones ? Eat lots of Soy Delicious or Tofutti!)
Anything sweetened with high-fructose corn syrup is more glycemic than regular sugar, because HFCS is half glucose. Also, modified corn starch (e.g. maltodextrin) is even higher than glucose, and I've seen that in "low-sugar" ice creams. Companies that sell "low-sugar" foods sweetened with modified corn starch should have their a**es sued off.
