I forgot to mention: we're dealing with both wheat and soy allergies, so we've been making our own tempeh. You can use any kind of beans and it's a great homeschool project. Basically, you dehull the beans, partially cook them, inoculate them and then put them someplace to culture. The tempeh in the store costs about $6 a pound, but you can make your own from your kids' favorite beans for about $0.50 a pound! Cheap and nutritious! There's lots of info on the Web. Go to gemcultures.com where they sell the culture by mail. It comes with easy instructions and Betty, one of the owners, is very helpful if you need advice. The most complicated part is making an incubator, but we just adjusted the pilot light in our gas oven till it kept the oven at about 86F. I read about someone else who has a hall closet thet's about the right temp. Check around the house, or make building an incubator part of the Science project!
