I loved that site (Wilderness family) when I saw it. I'm so glad you pointed us to it. Although I'm really glad that I ordered from Tropical Traditions, next time I'm going to go to Wilderneass and order their CO from India. Apparently it is slightly superior to the Philippines. SO, something else to look forward to.
Jasmine rice. All my life I have been a rice eater and it's my favorite food. Since babyhood my mother says that I would wolf down rice cereal and pooh at the others. SO I consume rice at least 5 times a week and have tried it in every conceivable recepee and every ethnic persuasion. Of all the rices I've tasted, Jasmine is my favorite. It, along with Basmati, are natural white rices, (whole grains) so we're eliminating the processing here. In most large cities it is available in the supermarkets as well as health food stores, but i don't know rural areas, as it tends to be an ethnic thing. It is the staple of Thailand and the majority of jasmine comes from there. It's infinitely more fragrant and flavorful than other rices, and it is wonderful when cooked with an infinite variety of herbs, spices or stocks.
Last night I cooked it ( I use a Zorijuchi rice cooker) by first coating the grains in the CO, then adding the Celtic Sea Salt and last the water. Tonight I'm going to do the same, but I just found a lovely looking half fresh coconut at the supermarket for 50. cents, so I'm going to grate some and put it in at cooking time. I'm really looking forward to it.
I must say, that ever since I've discovered that fresh coconuts and virgin, unprocessed CO is NOT bad for you, I have felt the oddest, most liberated feeling I've had in years. Imagine how many other things there must be out there that they told us we couldn't touch and they're wrong, Yippeee!!!
