Help with implementing Nourishing Traditions!! Especially Raw Milk by Betica ..... Nourishing Traditions Support

Hi! I'm new to this website and to Nourishing Traditions. I already practice alot of the principles in Nourishing Traditions: I use coconut oil, butter, eat organic meats, poultry, eggs, make my own bread with freshly milled wheat, etc... I have 4 children and do not have easy access to raw milk products. The expense seems out of my reach and I still don't know how easily I can get raw milk in Miami, FL. Am I doomed with the pastuerized and homogenized organic milk? Can I still make whey? Is there any value in buying Kefir that's not organic or made with whole milk?

I've also tried to make my bread using the soaking method and I can't seem to get it to work. It's flopped! I make 6 loaves a week and all 6 turned out terrible. I use a Bosch and until now it has been wonderfully easy and predictable. Now my dh doesn't even want me to pursue soaking because of my poor results. Help!

What do I do if it seems like my dd has a sensitivity to milk? I think it's making her ezcema worse. I had to take her off dairy completely to stop her ear infections when younger. As she got older, I let her have organic dairy products except she drinks rice milk instead of organic milk. If she starts having too many dairy products, even organic, her respiratory allergies develop into asthma (especially if there's a cold going around) and her ezcema flares. Is there any hope for her to be on dairy?

These are my beginning questions. I really see the wisdom in this book, but it seems impossible to follow, at times. I'd appreciate any suggestions and encouragements.
