I don't know about soaked wheat pastas, but you can find brown rice pasta at most health food stores. It is a very tasty alternative. I have been able to find organic ones and they are made with "brown rice, Sea Salt ". Brown rice doesn't need to go through a fermentation process. Soaking it will make it MORE nutritions, but it's not neccesary like with wheat.
