I think selections vary somewhat from store to store/region to region. At mine, the only organ meat out in the case for sale is chicken liver (they must have beef liver, too, but I don't eat it and haven't noticed). But I am sure you could talk to the butcher. They have sold me lard.

They have a large selection of fish, but it is all filets (FYI, we are on the Atlantic coast, so it is not like shipment is a problem).

Oh, but more importantly, the beef at my Whole Food is NOT pastured . . . just raised with no hormones/ Antibiotics . Someone asked about it, and the response was that pastured beef is not economically feasible! (He, he, he . . . grass is too expensive???)
