Hi all,

I was pleasantly suprised to find a NT forum when I was searching on the web today. Good timing too, since I screwed up on some broth last night.

Anyway, my question is relating to the recipe found in NT for beef broth.

How long should you boil it to extract the scum? I boiled my batch last night for about 45 min and still had a little bit of scum popping up.

After you drop the temperature to simmer, should you cover the pot?

Last night, I finally dropped the temperature to simmer at about 11:30, or so I thought. When I wake up in the morning, not only has all the liquid evaporated off, but the bones started to burn and left my whole house smelling like burnt tires.

If anyone has any suggestions, I would love to hear them.
