When I first got my wkg, it took some time to start seeing some growth (about 1-2 weeks). Not theyre are out of control! (can't keep up with it sometimes!). It now is super carbonated and has that slightly alcoholic taste to it (a good sign).
Originally I started with raw honey, then black molasses but noticed a moldy film on top of the solution (not sure if its good or not), but since I switched to raw turbinado sugar, I had none of that.
I also add a dry fig and half a lemon juice - I think its critical to have the lemon juice as it adjusts the pH for the good bacteria and prevents some of the baddies growth. Are you adding the lemon?
