Actually, no they don't dissolve easily. But, I have a great trick! What you do is put the tablespoon of epsoms salt in the apple juice (I think it's 3/4 cup). Stir it just a little bit. Then, take a straw and put it all the way to the bottom of the glass. Purposely start sucking up the salt for a few swallows, then before you stop drinking, move the straw up and take a big swallow of apple juice. Then, when your done drinking, your last taste will be the pure apple juice and you won't taste the epsoms salt at all. I guess this method would only be a problem for people who have a problem with the texture of the salt and drinking it that way, but I don't find it difficult whatsoever. :) Hope this helps you!
