That's funny, I'm still eating the kimchi I made a month ago. And last night I just started a fresh batch! This time I made 3 quarts. I used the Nourishing Traditions recipe, by the way, it's a little different. No honey, cider, or soy sauce, which I don't think koreans use.
Um, I used napa cabbage, I think that is the cabbage koreans usually use. All the kimchi I have ever eaten sure looked like napa cabbage, anyway.
Guess I should eat some everyday!
Perhaps the way kimchi works is it creates a strong smell that surrounds the person. This keeps people and birds far enough away at all times that they never infect you. And I'm only halfway kidding!
