Hi TBO: I've never eaten them raw, apparently they can be bitter. They can be grilled. Cut them into slices, round ways, sprinkle with salt on a paper towel, if they sit abit you will have to wipe off the excess water, that brings any bitterness out of them. You coat them in a seasoned, fine breadcrumb & flour coating, drizzle with olive oil and grill til lightly brown. You can also slice them and line your pan with the slices when you make lasagna. You use the eggplant instead of noodles. Have you googled for any recipes? You might find some there too. Good Luck with them.
