No you cannot taste the vinegar. I put about 1 tablespoon in and the taste just disappears.
You should enjoy this.
I usually put the vegs. in after i make the stock, just remember to let the fat rise to the top before you make your soup. The reason is, i think the vegs, might soak up some of the fat.
This broth can be very rich.
