These are easy, and very similar to each other.
1. Thai Pineapple Salad
Ingredients:
Fresh ripe pineapple, chopped into bitesize pieces
Cucumber, bitesize
Red or purple onions, slightly smaller than bitesize
Cilantro, torn into small pieces
The proportions is about 2 parts of pineapple and 1 part each of the other ingredients. Mix together and serve.
(You could experiment with a very light vinagrette dressing but it is typically served dry)
2. Pineapple Drink
In a blender, blend 1/2 a small pineapple, or 1/4 a large pineapple, with 1/2 a cucumber (peeled) and a smallish bunch of cilantro (to your taste). You can use a small amount of water (1/2 cup) to get things started. If desired, put in a small amount of ice to cool the drink slightly (but don't make it cold). This is a thick somewhat creamy drink and, when I use the core of the pineapple, it's got some fibers in it. Tastewise, it would be better if I didn't use the core, or it were strained. Above amount serves 1-2 (about 16 oz).
This drink would be a good one to serve at a dinner, strained and with a little more water mixed in. The taste is VERY refreshing!
