the whole top{chard} and root - go easy at first, this is one juice where you may feel funny at first with too stronga dose - i first started juicing to to cure my vision. I was 23 at the time - never ate fresh beet in my life. I went to the store and picked the three biggest I could find, mind you even with the Champion I had to push in 2 smaller carrots - but I drank the whole quart result in quick time - I was never so worried for the next 24 hours in my life...don't worry its just red...
