Sugar is also highly glycemic! High glycemic foods include sugar, potatoes, and grain products, low glycemic foods are most beans, fruits, and milk. However, even beans and fruits consumed in large amounts are also highly glycemic.
Non-starchy vegetables such as broccoli, cabbage, lettuce, etc are low glycemic even in large amounts. Meats and fats are non-glycemic.
There's nothing wrong with modest amounts of high glycemic foods as long as they are whole foods. The main problem with Sugar and white flour is that they are highly glycemic even in small amounts, and are devoid of any vitamins, minerals, and other whole-food complexes. These two ingredients together, along with hydrogenated vegetable oil, form the bulk of what most Americans eat these days, mostly because they are cheap and don't spoil easily. Examples include breads, cookies, cakes, candy, doughnuts, french fries, ice cream, muffins, pasta, chips, crackers, soft drinks, margarine, etc.
