Kale is the ultimate in "dark leafy greens" that they talk about in recommended food guides. It may be loaded with folic acid which is vital to developing babies. Check this out.
It's a member of the cabbage family, therefore, what they call a 'cruciferous' vegetable.
You can chop it fine and use it in a slaw, or stir-fry, or any soup. It takes little cooking (except the spines and stems if it is the curly variety).
Use some each day as it won't keep long in the fridge, especially in plastic. It goes yellow. I like to keep my greens, unwashed and dry, in glass bottles in the fridge.
Kelp is a variety of seaweed. Dulse is another, but it has a different, slightly stronger flavor that I love.
Seaweeds come dried, usually in healthfood stores, I think, or Asian markets.
They contain something like 81 nutrients, as does unprocessed pure Seasalt ; plus the seaweed contains plant nutrients.
It's slightly salty in taste and crumbles nicely. Apparently about two teaspoonfuls per day, with bites of food and slurps of water, is the best way for us to eat it.
Also apparently, it helps the body balance vital electrolytes.
