I'm intrested in making some cultured vegetables I tried to find some how to's on the internet but there was alot of of conflicting information so I guess you guy's & girls would be best to ask.

One site said all you do is get some raw vegetables store them in a air tight container let them ferment for 5-7 days at room temperature then store in fridge thats it...is this correct?

Also what vegetables would be good to culture?
