Wrenn has given you a ton of good advice and resources.

For a different perspective, you might look at http://www.westonaprice.org
I bought the cookbook Nourishing Traditions and am very happy with it. Am having lots of fun fermenting vegetables now.

This may, or may not, be the healthiest way to go. But it is certainly a good stepping stone, at the very least. Superior to the average diet, very delicious to eat, too. Rawfood vegan with juicing is certainly the best way to go if someone has severe bad health, to cleanse the body. Of course that depends on if the person is open and willing to be vegan for a while.

In any case, stay away from vegetable oils (olive oil is a fruit oil), refined flours and sugar, artificial sweeteners, Mono-Sodium-Glutamat (Natrium Glutamat) and soy (small amounts of naturally fermented miso and soy sauce should be okay).
