Did you make the zucchini bread? I didn't realize that about lupus. I wonder why all those sites mentioned lupus as something that pau d'arco is good for. Oh well, yes, keep investigating before she takes it.
Here's a recipe for banana-blueberry muffins from my stevia cookbook. I never made them, so if you do, let me know how they turn out. All stevia powders are different strengths, so you will have to find a way to tell if the batter is sweet enough before you bake it. In the cookbook it says that when baking with stevia, you have to use mini-muffin tins because of the way stevia effects the batter.
2 cups all-purpose flour
1 Tbls baking soda
2 ripe medium size bananas
1/4 tsp white stevia powder
1 cup buttermilk or kefir
8 Tbls unsalted butter, melted
2 large egg whites
1 cup blueberries
1 cup chopped walnuts (I would think this is optional, if you want to cut back on calories)
Oven 400 degrees
Sift together flour and baking soda, and set aside.
Mash bananas with fork until lumpy. Add the stevia to the buttermilk, and combine with the bananas. Gently stir in the melted butter.
Using an electric hand mixer, beat the egg whites until stiff, then fold them into the banana mixture.
Add the banana mixture to the dry ingredients and stir until just mixed. Do not overstir. Gently fold in the blueberries and walnuts.
Spoon batter into lightly oiled or papered mini muffin tin. Fill each cup with a heaping Tbls of batter, and bake for about 12 minutes.
