It does matter. Yes the body works to create homeostasis but it robs peter to pay paul inorder to do so. This has long reaching effects as mineral reserves are depleted and even bone structures begin to disintegrate.

Also an acidic person will have acidic saliva while maintaining a homeostatically checked blood ph, indicating that all is not well in the biological terrain.

It matters very much what you eat.
