So you are saying sodium ascorbate is not just buffered ascorbate acid but becomes a totsally fifferent substance though this simple solution! I understand that but it is still is ascorbic acid from the start. My point being is you only have to add sodium bicarbonate and ascorbic acid in a glass of water and you have sodium ascorbate , which you can do yuorself with these two substances! Sodium ascorbate is expensive compared to ascorbic acid and baking soda. Make your own!
